The First Post - Bread

Made boule with the following:

10 oz Bread Flour
10 oz AP Flour
3 oz Whole Wheat Flour
12 oz Water
8 oz Biga
1 Tablespoon instant yeast
1 Tablespoon fine sea salt

Mix, rise, shape, rise (in sprayed dutch oven) bake at 450 for 15 minutes, turned heat to 375 and baked until 200 degrees (35 minutes) The bread had a weird crispy crust that was kinda like a pie crust (probably from spraying the inside of the dutch oven) The crumb was pretty boring too, just like store-bought bread.


Overall, it was pretty disappointing - add more biga, salt, and wheat flour!
